Organically farmed, the vineyard flourishes on a clay – limestone soil on the southern slopes of Aix en Provence
The grapes are harvested by hand.
The grapes are destemmed and pressed in order to select the first juices.
Alcoholic fermentation takes place at 16-18°C
Colour: Delicately golden
Nose: pronounced aromas of vanilla and toasted hazelnut supported by a bouquet of garrigue honey
Palate: A good length in the mouth and after a woody note, vanilla and honey are found
Serve between 10°C and 12°C
Food and wine pairing
It is particularly appreciated in autumn and winter with fish in sauce or a bouillabaisse and goat’s cheese with savory and a dash of olive oil from Provence
